Take a walk through Mexico at Mexico Lindo

Ok, so we are madly in love with Mexican food. Any and all kind of Mexican food. I lived on Taco Bell when I was pregnant with both kids, and craved chips and salsa daily. And to this day we are both still deeply. Madly. Completely in love, but true, authentic Mexican in E’town we didn’t even know was an option….

Then, hidden away in “Lake Shore Center”, a little shopping center that can be found nestled between the Peddler’s Mall and Planet Fitness off of Dixie Highway; in the back left corner, is a beacon of light called Mexico Lindo. When you walk in it is like stepping into a little store and restaurant off the street in Mexico. To the left, there are walls of Mexican snacks and treats. Straight ahead is a counter and then you continue to walk into what is a Mexican grocery store. Keep walking because you don’t want to miss the homemade pastries that are directly past the counter on your left. There are so many fun choices of baked goodies and gigantic cookies. Some in hues of pinks and yellows, thick scone-like pastries that have just a hint of sweetness. As you continue to make your way around the store you will notice massive mortar and pestles, some beautiful bowls, and a wall of spices. Also, anything you would need for your convenience, as well as candy and snacks that an old fuse table is surrounded by.

Then make your way into the dining room, grab a drink out of one of the coolers, and a seat because this is really where the magic takes place. If it’s your first time you must order tacos. Get a chicken, pork, and steak to try some of their different flavors. I have completely fallen in love with the El Pastor (pork) and Carne Asada (steak). There is no going back for me, or venturing anywhere else on the menu. I crave these babies weekly. The pork taco is spicy and perfect. Wrapped in 2 warm, corn tortillas, and topped with a little onion and cilantro, with wedges of limes on the side. I beg you to try your first bite with only the squeeze of lime. The flavors completely sing, but another one of my obsessions is their house-made sauces that they bring out in squeeze bottles. I cover my taco in the spicy green salsa and then dot it with several small squeezes of the red, which is just a bit spicier than the green, and for me, that’s the perfect bite.

Oh, before you order anything though, I almost forgot, you must order their chips and salsa. Crispy, warm, and salty homemade chips, and salsa with the perfect bite of spice. If you’re a guacamole lover too; this is the place to get it. Most everything is made from scratch and you can tell.

The sandwich and soup also seem to be a popular choice as I look around I see a wave of each of those covering several tables as I am stuffing my face with tacos. All this to say, you may want to give those a try, but the tacos are just so perfect and melt in your mouth divine I cannot, not get them for the rest of my life.

Matt agrees with my taco obsession but has also had the burrito, which he enjoyed, but ventures back to the tacos anytime he happens to wander. My kids, on the other hand, are chicken and cheese quesadilla lovers, with refried beans. The cheese and seasoned chicken, they say is the best they have had. The first time we took them there they were wary and we had to drag them in, but after their first bite, all we heard was “Yum, oh my gosh, yum. Thank you for taking us here!” And then, of course, picking out a pastry, in the end, is always a treat, or even a snack to take home from the grocery. We always end our time there playing a game of fuse ball too, which is always a blast; until someone loses and gets upset. We are a bit competitive in our house ;-)

Mexico Lindo, not only is delicious, but it is also such an affordable place to take your family, and you don’t have to compromise quality. Next time you are looking for a place to eat you MUST stop here and eat at this little gem of a restaurant. Owned by two beautiful humans; Jose and Elvira Trejo, you will feel the sense of family when you eat there; that they bring into the atmosphere and in the cooking.

Be sure and check their hours of operation before you go. They are closed on Wednesdays and have different closing times in the evenings.

Seriously, though, next time you go out to eat you have to make this your next stop in Elizabethtown. It does not get better than this, and hopefully we run into you, which for us, would make it even better.
