Cloud Coffee from Dreamland

Quarantine has not been an easy transition. There have definitely been bright spots of joy and laughter, and moments of great rest and even work. There has even been incredibly special family time with fun, meaningful conversations. There has been beautiful music with dancing in the kitchen. There has been yummy food and TONS of creativity. But living outside of the community like this is a drag. A real drag. We are not made to live like this and it is truly hard. We were made to live in community with people and being taken out of it, completely stripped from it, like this is hard, to say the least. Sometimes I feel like I am going to crawl right out of my skin. Sometimes I want to just go let out a big scream. Sometimes I want to just sit and cry. And sometimes I just want to curl up in a big ball under the covers. How long is this going to last? How long will we be without being around one another? Being around family and friends? How long will it be till we can hug the neck of our loved ones?

BUT, there is GRACE. The laugher that we have shared…that’s grace. The smiles, the rest (real rest), finished projects, extra time for everything, technology (especially for staying connected), Spring weather (praise be!), cooking at home, having a home, going on walks, new recipes to try and cooking….ALL the cooking…..

The list, if we stop and think about it, could go on and on and on. This season is not what any of us thought it was going to be. It’s going to be hard, and then there will be some bright spots of hope and joy sprinkled throughout; maybe even more if we keep our eyes open to see them.

One new recipe I just learned about that has become an internet sensation recently is Dalgona Coffee a.k.a. Cloud Coffee. It’s an iced or hot coffee drink made with instant coffee that is trending everywhere. For me, it’s the perfect balance of sweetness and bitterness from the coffee, and exquisitely creamy. My favorite way that I discovered is made with whole milk, but other milk, like almond milk is good too. Mix it well for peak flavor, but remember to enjoy the beauty as you stir ;-)

This is a fun drink to try while we are all stuck inside. Enjoy iced or warm, whatever you prefer, and let it be a reminder of His grace upon grace, even when it’s hard to see.

Ingredients:

  • 2 tbsp instant coffee

  • 2 tbsp sugar or sweetener of choice

  • 2 tbsp hot water

  • 1 cup milk of choice

Directions:

In a medium-sized bowl whisk coffee and sugar together. Add hot water and whisk till it comes to a beautiful, golden, “cloud-like” froth. It takes about 3 minutes with a hand-held whisk or even less time with an electric mixer. To make an iced drink, add ice and milk to a glass and top with the beautiful coffee mixture. For a warm coffee drink, simply use warm milk (imagine that ha!). Mix well for peak consistency and flavor. If you are not a fan of strong coffee drinks opt to use only 1 tbsp of coffee. Sip and truly enjoy ;-)
